Stuffed Manicotti


1 250 g package of manicotti
15 mL (I Tbsp) cooking oil
125 mL (½ cup) chopped onion
125 mL (½ cup) diced green pepper
500 mL (2 cups) Ricotta cheese
250 mL (1 cup) grated Mozzarella cheese
2 eggs slightly beaten
500 g (1 pound) cooked sausage meat or hamburger
2 mL (½ tsp) salt
dash of pepper
2 750mL (24 oz.) jars of pasta sauce
2 mL (½ tsp) dried oregano leaves, crushed
1 mL (¼ tsp) dried basil leaves, crushed
125 mL (½ cup) grated Parmesan cheese


  1. Cook half the manicotti noodles in 5 L (5 quarts) rapidly salted water 6 minutes or until just flexible.

  2. Carefully remove manicotti with a slotted spoon; drain.

  3. Repeat above with the second half of the manicotti.

  4. In large fry pan, heat oil, sauté onion and green pepper until tender; set aside

  5. In a large bowl, combine cheeses, eggs, meat, salt and pepper; mix well.

  6. Stir in onions and green pepper
  7. Gently fill each manicotti shell with the mixture and place in 2 layers in a lightly greased 32.5 x 22.5 cm (13 x 9 inch) baking dish; set aside.

  8. In large bowl, combine pasta sauce with oregano and basil; pour over manicotti.

  9. Sprinkle with Parmesan cheese.

  10. Cover and bake at 180°C (350°F); uncover and bake 10 minutes more.
